Ingredients
2 cups granulated sugar
2 cups water
2 small lemons, peel only
1 1/2 cups lemon juice, freshly squeezed
2 large lemons, halved and hollowed out
Directions

In a saucepan, combine the sugar, water and lemon peels. Bring to a simmer, stirring often to dissolve the sugar. Remove from heat. Let cool to room temperature.

 

When cooled, remove the lemon peels. Stir in the lemon juice. Pour into a loaf pan. Place in the freezer for 1 hour. Stir with a fork. Return pan to freezer.

Check on the mixture every hour for 4 more hours, and run a fork through the ice crystals each time.

Scoop the granita into hollowed-out lemons to serve.
